SECRET PIZZICATO RECIPE:  <span style="font-weight: normal;"><strong>3-Cheese Stuffed Crimini Mushrooms</strong><br />
12 large crimini mushrooms                                 1/3 cup fennel, finely chopped<br />
3 tablespoons sun-dried tomatoes (chopped)  1 teaspoon chopped garlic<br />
1/4 cup of grated fontina                                        2 tablespoons chopped basil<br />
1/4 cup of crumbled feta                                         1 egg<br />
1/2 cup of parmesan cheese                                   olive oil</span></strong></p>
<p><strong> </strong></p>
<p>Select 12 large crimini mushrooms. Remove the stems and chop them. Add  fennel, sun-dried tomatoes, and garlic to the mushroom stems. Sauté in olive oil over medium high heat for about 8 minutes or until fennel is tender.</p>
<p><span id="more-1967"></span>While the fennel mixture cools, mix the three cheeses and basil in a bowl. Season to taste with salt and fresh ground pepper. Beat the egg and then add it to the mixture.</p>
<p>Stuff the mushroom caps with the mixture and mound it up about 1/2-3/4 of an inch. Place mushrooms on a greased sheet pan. Bake at 450 degrees on the top rack for about 12 minutes or until the tops are golden brown.</p>

We did some quick calculations and found that Pizzicato purchases over 200 <span style="text-decoration: underline;">tons</span> of high gluten ‘Power Flour’ EVERY YEAR from  Pendleton Flour Mills. So if buying local is as important to you as it is to us, you can actually feel proud to eat at Pizzicato. We’re honored to work with Pendleton Flour Mills and our other local partners.</p>
