Draper Valley Chicken & Creamy Pesto

From Draper Valley Farms in Washington, this antibiotic and hormone-free chicken is not just better for you, it tastes amazing too. To make this dynamite pie, we top our dough with a housemade ‘pesto cremoso’ and handfuls of mozzarella. Then we add shredded chicken breast that we’ve slowly roasted to retain all its flavorful juices. Next come sweet grape tomatoes and pancetta with a dusting of parmesan and fresh basil. It’s love at first bite!

Spring Asparagus Bruschetta DARE TO BELIEVE!

Spring HAS Sprung (breathe…) and we’re delighted to say, so has the Asparagus – which is why we are featuring this best-of-the-season vegetable. Pictured here is our Lemony Asparagus Bruschetta.  For this appetizer, we cook the asparagus “al dente” then toss with a classic marinade of garlic, olive oil and lemon juice.  We then put a ‘shmear’ of mascarpone cheese on toasted slices of Lovejoy Bakers’ ciabatta and place the bite-sized spears on top.  With a garnish of shredded Parmesan, this bruschetta is a perfect start to your meal.  Try it with a chilled glass of Riff Pinot Grigio, easy to drink with pear and citrus notes.  With luck, you can find a sunny spot on the patio to enjoy the weather and your meal!
